Fairmont Cheshire, The Mere opened on 10 July 2026. Fairmont announced in May that reservations were live for that date. The hotel sits on a 157-acre estate overlooking The Mere Lake, just outside Knutsford, and is the brand's fourth in the UK after The Savoy, Fairmont Windsor Park and Fairmont St Andrews. Select Group carried out the transformation.

The estate has a mention in the Domesday Book of 1086 and has been a leisure estate and a private club. Bergman Design House did the interiors. There are 116 bedrooms. Accor's December 2025 roundup counted 27 suites among them and the July releases count 23. Rooms run from Fairmont and Deluxe categories, some overlooking the lake and golf course, to Junior Suites, a Signature Suite and a Presidential Suite.

Gordon Ramsay at The Mere is the main restaurant, with a terrace over the lake and a speakeasy style bar. The Orangery serves afternoon tea by day and turns into a champagne and oyster bar in the evening, and the Club Lounge serves globally inspired dishes alongside Indian-influenced cuisine. Fairmont Spa occupies a restored Victorian stable block, with a 20-meter pool, a Finnish barrel sauna, ice baths and six treatment rooms. The 18-hole parkland course was designed in the 1930s by James Braid and George Duncan. The Grand Ballroom holds up to 1,000 guests.

Manchester Airport is ten minutes away and the city centre 30. Check-in is from 3pm and check-out at 12pm.
